Black Bean Brownies. Picky toddler approved! Don’t let the beans scare you they’re good (especially with ice cream..)

- Preheat oven to 350F
- 1 can rinsed black beans
- 3/4 cup cocoa powder
- 2 eggs (or can be vegan with 2 Tbsp flax and 6 Tbsp water)
- 3 Tbsp avocado oil or 1/2 avocado
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1/2 cup maple syrup
- 1 1/2 tsp baking powder
.
- Blend all ingredients using a food processor or blender (I’ve had better luck with food processor if you have one)
- pour into mini muffin tin or brownie tray
Optional but recommended: top with chocolate chips
- bake at 350 F for 25 minutes
