Wild Cod with Cucumber Tomato Salad

I can't get enough cucumber, it's refreshing and hydrating and perfect with pretty much every dish this summer. For this easy dinner we first coated wild cod with herbs de Provence.


Then we made a super simple tomato cucumber salad (chopped tomatoes, chopped cucumbers, salt, pepper, lemon and cilantro).


To cook, we used a cedar plank on the grill for the first time and loved the result. Served it with a pack of microwave pre-cooked quinoa (takes 90 seconds!) and steamed broccoli
