Skillet Baked Blueberry Oatmeal with Flax & Chia 〰️

You can bake before serving or prep the night before and heat before serving. Serve with Greek yogurt and lemon zest. (Side-note: Greek yogurt and lemon zest is my new favorite - so good).

Serves 2

Preheat the oven to 350F
.
Add to bowl:
〰️ 1 cup oats
〰️ 1/4 tsp baking powder
〰️ 1/4 tsp salt
〰️ 1/4 tsp cinnamon
〰️ 2 Tbsp chia
〰️ 2 Tbsp ground flax
.
In a separate bowl beat,
〰️ 1 egg
〰️ 1/4 tsp vanilla
〰️ 3/4 cup milk of choice
〰️ 2 Tbsp maple syrup
.
Stir together and add 1/2 cup blueberries.
.
Bake for ~25 minutes.
Top with Greek yogurt and enjoy!☀️
