Pavlova is an Australian dessert with layers of meringue filled with whipped cream and fruit.
I had never had it before living in the UK and it’s the perfect summer dessert. I highly recommend trying it with fresh cream and your favorite summer fruit. 👌🏽
6 egg whites
dash of salt
1 tsp cream of tartar
1 2/3 cup sugar
2 Tbsp cornstarch
1 cup heavy cream
1-2 Tbsp powdered sugar
Summer fruits of choice (such as, peaches, raspberry, strawberries, blackberries)
Preheat oven to 250 degrees
Make meringue, by whipping 6 egg whites with dash of salt until foamy
Then add, 1 tsp cream of tartar and 1 2/3 cup sugar, 2 Tbsp cornstarch and beat until stiff, shiny peaks form.
Line baking sheets with parchment and shape meringue into 3 equal circles.
Bake for 1 hour 15 minutes
Make a whipped cream to spread in between layers and on top of pavlova
1. Whip 1 cup heavy cream with 1-2 Tbsp powdered sugar and 1/2 tsp vanilla
2. Top with your favorite summer fruits! I used blackberries, raspberries, peaches and lemon thyme sprigs.
