Chicken Soup

Despite it being August, 🌪 tornado warnings are a good excuse for chicken 🍲 soup amiright?

.

Classic comfort food. I think we all need some right now.

.

Adapted from @thekitchn

〰️ Chop veggies (4 carrots, 1 onions, 1-2 celery stalks if you like or have - I didn’t have any)

〰️ Sauté 1 tsp of olive oil in a Dutch oven add vegetables and cook until just softened.

〰️ Add 2 minced garlic cloves and 3 pounds chicken thighs and brown on each side.

〰️ Add 6 cups chicken stock (homemade or store bought).

〰️ Simmer for 30 min.

〰️ Add 1 cup pasta of choice directly to pot, (I used gluten-free Whole Foods 365 penne and it was good) cook according to package ~10 min.

〰️ taste and season with salt, lots of pepper, garlic powder and fresh herbs we added tarragon, parsley would also work
