Butternut squash hummus with roasted garlic.

🔸Roast 2-3 garlic cloves wrapped in foil at 450F for 20 min and add to food processor with:

🔸 1 can of chickpeas rinsed

🔸1.5 cups steamed butternut squash (from frozen ok!)

🔸2/3 cup tahini

🔸2 Tbsp olive oil

🔸1 tsp each of smoked paprika, chili powder& paprika

🔸juice of 1 lemon

🔸2 tsp salt

Blitz and taste, adjust seasonings as needed.


Topped with sesame seeds, red pepper flakes, sumac and a drizzle of olive oil.
