Brilliant Beet Bean Dip.
Usually I do a beet hummus but I had no chickpeas left, so a little remix〰️
1. Roast 1 or 2 beets (rinse beets wrap in foil) and roast at 350F for one hour
2. Add to blender, cooled beets, 1 can of cannelini beans (or chickpeas), 3 Tbsp olive oil, salt, pepper and juice of half a lemon.
3. Adjust seasonings as needed and enjoy with vegetables, pita or crackers.
