Baked Pumpkin Spice Oatmeal with sautéed apples.

These can be made as squares, muffins or in mini skillets. They can also be made ahead for the week.

1. Preheat oven to 350

2. Add to bowl:

- 1 1/4 cup oats

- 1/2 tsp baking powder

- 1/4 tsp cinnamon

- 1/4 tsp salt

- 1 tsp pumpkin pie spice

- 2 Tbsp ground flax

- 4 Tbsp chia

3. Stir to combine

4. In a separate bowl add:

- 1 egg

- 1/4 tsp vanilla

- 3/4 cup milk

- 1/2 cup green yogurt

- 4 Tbsp maple syrup

5. Mix wet ingredients

6. Combine dry and wet ingredients.

7. Add to either a greased square to make oatmeal squares, muffin tin or mini skillets.

8. Bake for 25 minutes

9. While it is baking slice 1-2 apples thinly

10. Add to pan 1-2 tsp oil. Add apples and a few dashes of pumpkin pie spice. Sautée until soft.

11. Top baked oatmeal with your favorite toppings I used apples and cashew butter or Greek yogurt and maple syrup.
